A classic French appetizer includes an entire wheel of brie being wrapped in puff pastry and baked until the pastry has turned golden brown and the cheese is oozing out of its skin. This smaller version of that old favorite includes French Brie, toasted almonds and a spread of apricot jam all wrapped up in a bite sized pocket of buttery puff pastry dough.
Before serving, allow these little pockets of goodness to thaw in your refrigerator until they are tender to the touch. Bake them off on a sheet tray at 350F degrees until the pastry has puffed and turned golden brown.
Be sure to serve these hot out of the oven while the brie cheese is still soft and warm. If they sit out for too long, which is unlikely due to their delicious aroma and flavors, a quick reheat will re-melt the cheese and they will be ready to go for round two.
