Black is a heirloom variety of Asian rice. An unmilled rice, retaining the fibre-rich husk, the unusual colour makes black rice striking and exotic when used in desserts. It is wonderful with fresh fruit such as mangoes and lychees with a fruit or rice syrup. The rice tends not to be very glutinous, and has a rich, slightly sweet, strongly nutty flavour. Cooking time is longer than hulled rice.
