Mexican and other Latin foods are known for their ‘bursting with flavor’ qualities. This traditional Mexican marinade is a staple of the Oaxaca region. It’s made with sun dried tomatoes, Ancho and Chipotle chilies and a blend of authentic Mexican herbs and spices. This marinade is incredibly versatile and can be used to flavor lamb, pork, chicken and firm varieties of fish; both as a marinade before and during the cooking process, and as a plating sauce after.
Marinating your proteins and hearty vegetables allows you to improve your food in several ways. One, you’re of course infusing your ingredients with lots of wonderful flavors. Two, any acidity in the marinade tenderizes your meats and proteins by starting to break down some of the tougher fibers.
