Cannellini Beans, also called Fazolia Beans, are a white Italian kidney bean. This all-purpose bean is a halfinch long, has a mild, nutty flavor and smooth, tender texture. Having originated in Italy, Cannellini Beans are extremely popular in traditional Italian cuisine.
Cannellini Beans are wonderful in pasta e fagioli, soups such as minestrone, hearty stews, cold salads, rice dishes and chili. Make a creamy hummus or blend into bean dips and purees. This bean is the perfect complement to classic Italian cuisine.

Carefully sort beans and rinse thoroughly. Soak beans in three times their volume of cold water for 6 - 8 hours. Drain soaking water, add fresh water to cover beans by 3 inches. Bring water to simmer, and cook beans, uncovered, until tender, approximately 1-1/2 to 2 hours. Season with salt in the final stages of cooking.
