Originating from Greece and Spain, Gigante Beans (Giant White Beans) hold their shape well, have a tender, yet meaty texture and absorb flavors from marinades and seasonings very well. Their subtle, sweet taste and creamy texture are great for hearty soups or pairing with poultry, seafood and hearty greens like kale or spinach. Gigantes are an excellent source of complex carbohydrates, protein, fiber, antioxidants and a good source of iron. Creamy-white in color, this member of the white runner bean family cooks to about the size of a teaspoon and is also known as Gigandes, Yigante and Hija.

Carefully sort beans and rinse thoroughly. Soak beans in three times their volume of cold water for 8-12 hours. Drain soaking water, add fresh water to cover beans by 3 inches. Bring water to simmer, and cook beans, uncovered, until tender, approximately 1-1/2 to 2 hours. Season with salt in the final stages of cooking.
