This ancient whole grain is renowned for its pleasantly chewy, yet al dente texture and its bright golden hue. Grano tastes like pasta, but it can be cooked like a rice and it is more nutritious because only a small amount of outer bran is removed. Grano, which means grain in Italian, is made from specially selected durum wheat, a variety used to make pasta and most reminiscent of barley. While Grano has a long history in southern Italy, where it originated in early cooking as a simple, nutritious and flavorful meal prior to the invention of pasta, its not until recently that American chefs have realized the variety, whole-grain goodness, flavor and simplicity of Grano. It is high in fiber, protein and minerals. Traditional recipes feature the pleasant chewiness of Grano in soups, pilafs and entrees, but it is also a natural served cold in salads, where it provides added flavor, texture and nutrition. When cooked with extra water, grano also makes a delicious hot breakfast cereal.
