Used for preserving and curing meats, as well as sausages and charcuterie. Also known as Prague Powder #1. Similar to Sel Rose. Dyed pink to distinguish it from normal salt. Use 1/4 level teaspoon per pound of meat in brine. Sodium Nitrite prevents bacteria growth and preserves original color of meats. Ingredients: salt, sodium nitrite (6.25%), Propylene glycol, sodium bicarbonate, red #3.
